Baked soup with tomatoes and peppers
A tasty and delicious soup with tomatoes and peppers. The ingredients are baked in the oven and afterwards blended with a little cream for a creamy soup. Serve with toasted bread.
Appetizer for 4
Ingredients:
- 1 large onion
- 1 kg of tomatoes
- 2 large peppers
- 3-4 cloves of garlic
- 3 tbsp of olive oil
- 2 tsp of dried basil
- 2 tsp of dried thyme
- 1 tsp of chili flakes (can be omitted)
- 1 tsp of flake salt
- Freshly ground pepper
- 100-200ml cream for cooking
Method:
Preheat the oven to 200°C (fan).
Cut the onion, tomatoes and peppers into pieces and peel the garlic.
Place all the vegetables in an ovenproof dish and add the olive oil, basil, thyme, chilli flakes, salt and a little pepper. Bake for approx. 30 minutes.
Pour all the baked ingredients into a blender and blend until creamy. Add a bit of cream to round off the taste. Season to taste with salt and pepper. Serve the soup with toasted bread.
