Fresh tomato salad with peach, basil and salted almonds
A light and fresh summer salad with juicy peaches, tomatoes, and basil from the greenhouse. The salad is perfect as a side dish for summer barbecues or for the light hunger along with your favourite source of protein.
Side dish, serves 4.
Ingredients:
- 300g tomatoes of your choice
- 2 peaches
- A bunch of fresh basil
- 50g of feta cheese or a dairy-free alternative
- 50g of roasted almonds
- Balsamic glaze
Method:
Cut the tomatoes into quarters and the peaches into thin slices.
In a bowl, arrange the tomato pieces, peach slices, and basil leaves.
Crumble the feta cheese over the salad and drizzle with balsamic glaze.
Finely chop the almonds and top the salad with them. The salad is now ready to serve.
